The past few years have been particularly tough for businesses, especially in hospitality and the road ahead doesn’t look any easier. That’s why I wanted to create a series that takes you behind the brand - showing not just the good, but also the challenges and struggles that come with running a business.

As we navigate the demands of our fast-moving business, I hope this series highlights the incredible effort our team puts into reinventing our menu every six weeks. My hope is that it can also inspire others in the industry, opening up conversations about the challenges we face in hospitality and sharing ideas for tackling them.

We’ve made plenty of mistakes along the way, and I know we won’t always get it right in the future either. But one thing I can promise is that we’ll always be authentic, stay true to ourselves, and enjoy the journey.
